Grandma Mahler’s Banana Bread

Here I am, a week before Christmas searching through Grandma’s recipe box for her infamous Banana Bread. My sister and cousins all claim to have her recipe–which are all quite different. Come to find out, Grandma had multiple versions of various breads, dishes and many baked goods. So, I’m not surprised if the cousins grabbed a different version than this one.

In her handwriting, I found another version tucked in with her Bread Pudding recipe. Almost missed it. This is the one I remember making for many years.

This sweet lady had a heart of gold. She was kind, generous, thoughtful and a very wise woman. She taught us how to improvise and stretch meals on a tight budget. Thanks to her and out mother, we learned early on how to make multiple meals from on 1-2 lbs of meat.

Her baked goods were like gifts from heaven.

Here is my favorite version:

Blend until smooth:

1 cup Sugar

1/2 cup Butter

2 Eggs

Add:

3 tbsp Buttermilk

3 Ripe Bananas (frozen then thawed works best)

Mix well.

Add:

2 cups Flour

1/8 tsp Salt

1/2 tsp Baking Powder

1 tsp Baking Soda

Blend all ingredients. Batter should be thick, fluffy and very moist.

Bake 40 – 60 minutes depending on the size of your loaf pans. Once the bread is golden brown on top, cover with tin foil for the remaining time. Makes 1-2 loaves of bread depending on the size of your pans. These loaves are delicious on their own, but if you like a nuts in your sweet bread…go for it. Enjoy!
